Accommodation
I almost always book my accommodation through Booking.com. What I like about it is clearly seeing the cancellation policies, being able to cancel easily with just a click, and having all my bookings in one place. I also have a Genius discount which grows the most you use booking.com.
Tours
I usually travel independently and book tours on the ground using Get Your Guide or Viator.
